Celebrating Food: Eleventh Salute to Women in Gastronomy: day of events features more than 50 speakers, hands on sessions

I’m extremely proud to be a member of Les Dame d’Escoffier, and am excited to share information about an upcoming event celebrating food.

You may be familiar with the name Pati Jinich. She is the star of the PBS series “Pati’s Mexican Table.” Jinich will keynote the Les Dames d’Escoffier DC chapter’s Celebrating Food: Eleventh Salute to Women in Gastronomy Symposium, a one-day culinary celebration of all things food. The day of food begins with a talk by Jinich that will highlight her journey from political analyst to acclaimed culinary TV personality and Mexican food maven.

To be held March 10, 2018 from 8:30 AM to 5:45 PM at The Universities at Shady Grove, the Women in Gastronomy Symposium will offer workshops and hands-on sessions with more than 50 speakers participating in 16 sessions that comprise food demonstrations and tastings, panel presentations and cooking classes.

Event co-chairs Laurie Bell and Eileen Dykes said “It’s all about food. So if you are interested in preparing it, writing about it, photographing it, selling it or simply savoring it, this is your kind of event.”

Guests will also enjoy a culinary EXPO that showcases new products and restaurant samples, a “tapas y tequilas” finale and a festival of desserts. Registration includes parking plus a continental breakfast and lunch.

A few other session highlights:

Preserving and Fermentation. (Hands-on Cooking Class)
Learn techniques of lacto-fermentation and pickling, and the science of sourdough fermentation; various methods of Italian preserving techniques (preserving in oil, vinegar, or alcohol); and how to make classic Italian giardiniera (mixed vegetable pickle). Writing Family Food Memoirs.
Learn how to create a cherished family cookbook that preserves family memories for the next generation; includes how to get children and family members to tell their stories and how to write engaging family stories with proven writing tips. Speakers: Dianne Hennessy King, Author, Memoir Your Way; Dame Susan Barocas, Chef, Food Writer, Filmmaker; Constance Carter, Former Head, Library of Congress Science Reference Section. Food Porn.
“Food porn” is defined as “close-up images of juicy, delicious food in advertisements.” This session takes a look at its evolution— via websites, blogs, and smartphone apps— and food porn’s impact on health, technology, and the food industry. Hear what works and why. Dame Kristen Hartke, Food and Beverage Writer; Dame Marie Ostrosky, Owner, Grey Salt Culinary.

Rock & Roll Your Pie Crust. (Hands-on Cooking Class)
No more doughphobia! Learn to make a fail-safe pie crust, roll it out, and decorate with panache. Students will leave with confidence, award-winning recipes, and their own fruit pie to bake at home. Dame Susan Wallace, Chef/Owner, SWEETFREAKZ; Dame Cathy Barrow, Cookbook Author

Dumplings Along the Silk Road. (Demo)
Take a virtual journey along the Silk Road—from Venice to China— to understand the role of dumplings in European and Asian cuisines. Enjoy dumpling samples.
